The Food Procurement Analyst tracks and analyzes procurement, inventory, and produce consumption data to optimize our procurement process to a world-class level – quality produce at the very best market prices. Responsibilities

The Procurement Analyst answers the question, “what are our most procured items, and what are the daily market prices for each and who are the vendors we can get it from?”. You will own:

1. Market Data
   1. Build and maintain a database of all ingredients
   2. Track the daily price of each ingredient across many vendors in the market to get fair market prices
2. Daily Procurement Data
   1. Track prep team’s usage of items (to calibrate recipe conversion formula)
   2. Calibrate recipe conversion formula for procurement list process based on daily prep consumption
   3. Monitor vendor prices and flag any fluctuations/increases
3. Food Procurement Optimization
   1. Make data-informed recommendations to Procurement Manager to make procurement more cost and quality efficient

  • Spreadsheets – wizard/witch with spreadsheets, formulas, models, and report generation
